Local Produce is the prettiest.

Harmony Valley put together a really wonderful root vegetable stew mix that consisted of a a variety of beets, carrots, turnips and parsnips. I added a few red potatoes and garlic, tossed it all with a little thyme and olive oil and roasted the whole she-bang at 350 degrees for 40 minutes. Once the vegetables were done I combined them with one part vegetable broth and one part cream of celery soup, added some fresh ground pepper and served it with cheater buttermilk biscuits.

Beautiful and delicious. Next time I make this I will substitute roasted sweet potatoes instead of red potatoes to add a little sweetness to it.
